They do have access to some evidence proving that Talos is a god, so they want to ban his worship in order to make him weaker. That's why I think that Talos worship being a direct "attack" on their religion isn't necessarily the case here and I think there are other possible options why the Thalmor banned Talos worship: That's not exactly true - you also have the Tribunal, Reman, The Cult of Emperor Zero, Mannimarco and yet the Thalmor never went out of their way to ban these religions. None of the other religions in Tamriel are such a direct "attack" on the Altmer religion. So overall it makes Talos worship not that different from some other religions we know of in Tamriel.
