They are not ok with people worshipping a guy who attacked them for no reason in possibly the most terrible way. They do have access to some evidence proving that Talos is a god, so they want to ban his worship in order to make him weaker. That's why I think that Talos worship being a direct "attack" on their religion isn't necessarily the case here and I think there are other possible options why the Thalmor banned Talos worship: That's not exactly true - you also have the Tribunal, Reman, The Cult of Emperor Zero, Mannimarco and yet the Thalmor never went out of their way to ban these religions. None of the other religions in Tamriel are such a direct "attack" on the Altmer religion. So overall it makes Talos worship not that different from some other religions we know of in Tamriel.
But more importantly, notice how most of the evidence we have about Talos being a god is basically available only to the player character (Wulf, KoTN, the blood of the divine), so the Thalmor don't have access to it and have no reasons to believe that Talos is actually a god. I personally think that even we as players can't be 100% sure that he ascended to godhood as I said here. He was not a direct descendent of the gods. Tiber Septim did not follow this principle. And Sithis' following is fairly small and often restricted to criminals, so it's not really worth persecuting. The Khajiit and Argonians worshipping their religions doesn't really matter because, well, the Altmer don't think they really matter. They just worship Y'ffre in addition and don't care to follow the Altmer's path themselves because they care more about the present than about the past or future. The Wood Elves actually do worship the Altmeri Pantheon and acknowledge the Altmer's interpretation of Alaxon. Humans claim that he achieved what the Altmer seek to achieve with (as far as the Altmer are concerned) half the effort. He was considered very talented at what he did, but not because he devoted himself entirely to being perfect at it. Tiber Septim didn't spend his entire lifetime mastering his craft. It basically invalidates their entire culture. That's an incredibly offensive claim from their perspective. Oh yeah, and it's the same guy that butchered thousands of your people for no reason." From the Altmeri perspective, the humans have basically walked up to them and said "Hey, you know that state of perfection that you all spend your entire lives constantly striving to achieve but almost never do? Some human did that without even trying.
And they believe that this is only possible because they are descendants of the gods and that Auriel passed the necessary knowledge on to their ancestors before he ascended himself. Altmer spend lifetimes mastering their crafts. This state of perfection (known as Alaxon) is a central concept of Altmeri society.
The central tenet of Altmer religion is that one can ascend to godhood by achieving absolute perfection.
